I had an opportunity to sample a few of the best vegetables in America at this year’s International Vegetarian Food Expo in Indianapolis.
It’s hard to say exactly what I tasted this year, as there were a few new additions to the crop.
But for now, here are 10 of my favorite new veggies.

The best veggie options are all at the $10 or less range, including a $4.99 canned tomato sauce that was a welcome change of pace.
2: This is my go-to for salads: I can always make a side salad with tofu, broccoli, avocado, tomatoes, and sesame seeds and still have a salad in the freezer.
3: My favorite vegan soup, the one made with tofu and chickpeas, was the cheapest I’ve had, but it was delicious.
4: A new addition to the vegetable family is the new avocado oil, a very low-sodium alternative to traditional vegetable oils.
5: The zucchini I sampled was absolutely delicious.
I like to serve this salad with black beans, as they are so easy to throw together.
6: I loved the flavors of avocado in a bowl of tofu, as well as the pectin in a baked sweet potato.
7: It was one of the only veggie soups that didn’t taste artificial.
8: This new beetroot salad was delicious and healthy, but also very filling.
9: I love the spinach, as it was a perfect substitute for potatoes in my recipe for the new bean burger.
10: This was my favorite vegetable bowl of all time: the black beans.
It was so creamy and flavorful.
